A pioneer of the Bean-to-Bar movement since 2001, Pierre Marcolini is one of the few chocolatiers who makes chocolate from bean to bar in the Maison’s Brussels workshop, using cacao beans from native trees sourced from small plantations dedicated to preserving biodiversity.
